It’s easy to go for convenience at lunch time; sandwiches, ready meals, and fast food abound. However, it’s easy to make your own healthy, tasty lunch and take it wherever you like! You can always prepare your food the night before if there’s no kitchen at work. Here are a few examples!
• Sandwiches: It’s easy to make your own healthy sandwiches and pack them full of flavour and ingredients you like! Make them balanced by choosing one of cheese, egg, meat OR fish and top with plenty of veg. Try and stay clear of mayonnaise or other fatty sauces. Another good source of protein is peanut butter (try peanut butter and cucumber sandwiches!)
• Chicken Couscous: Couscous is filling, takes 5 minutes to make and can be made in advance. Once the couscous is ready, add exciting ingredients to make it tasty: dried apricots, herbs, spices, olive oil, chopped cherry tomatoes and strips of roasted chicken. Mouth watering Moroccan-style lunch!
• Tuna Pasta: Cold pasta can be quite nice especially if it has tasty tuna, pesto and tomatoes with it! If you don’t like tomatoes, go for rocket. Red onion goes well but is optional if you need to talk to customers!
